Been craving for a sweet dessert to wash down all the delicious food you just had? How about some silky soft caramel pudding?
Oh wait, you’re allergic to eggs? Does the smell put you off? Or perhaps you’re vegan. Whatever your preference is, worry not. Here’s an easy-to-make recipe for caramel pudding that caters to all your needs. The best part of this recipe is that you don’t need to cook it!
Ingredients
For caramel:
- 1/4 cup sugar
- 3 tablespoons water
For pudding:
- 10 grams jelly (gelatin) powder
- 4 cups water
- 1 can evaporated milk
- 1/2 cup condensed milk
- 3/4 cup sugar (can add up to 1 cup for a sweeter taste)
- 3 tablespoons custard powder
- 1 teaspoon vanilla essence
Method
- To make the caramel
Cook sugar and water in a pot over medium heat. Wait for the sugar to turn brown and keep stirring continuously. When the mixture turns into a clear brown caramel, then pour it into a pan and keep aside.
2. To make the pudding
In another pot, bring together all the ingredients for putting on low heat. Cook it for a few minutes. Wait for all the ingredients to dissolve and make sure no clumps are visible. When the mixture turns a little thick, turn off the heat.
3. Strain the cooled pudding mixture and pour into the pan based with caramel sugar.
4. Chill in the fridge for 2-3 hours, or until the pudding sets.

Once they’re done, you can take it out and serve it chilled.

Here’s what the end result looks like.

It’s a perfect dessert for a summer day and you can make and store it in advance for days.
